The aim of this work package is to identify the barriers to and opportunities for improved handling of suboptimal food products in the food supply chain, in order to design possible improvements and understand how such improvements can be facilitated. Retailers, food suppliers and producers are involved in the analyses. Contractual arrangements and the governance of transactions between farmers-wholesalers, wholesalers-retailers, farmers-retailers, wholesalers-caterers will be included as a specific case of an opportunity/barrier. The implications of food legislation and specific contractual arrangements, such as the “take back clause”, will be examined in detail.
