The aim of this work package is to define key concepts and develop a theoretical model of the influencing factors in the micro-and macro-environment for food waste, and suboptimal foods in particular. This model serves as a reference point for all subsequent work packages. Focus will be given to consumer-level food waste and exploration of influencing factors originating in 1) food consumer behaviour, the functioning or structure of 2) retail sector and 3) processing industry, and 4) the food and agriculture sector's economic-legislative environment.
